Honey

Honey is one of nature’s most precious and generous gifts. It is and must remain a natural product in its entirety, as it is obtained from the nectar of the flowers combined with an enzyme from the bee’s stomach and then given a syrupy consistency inside the honeycomb by an internal fanning process of the bee’s wings. How could man possibly hope to artificially interfere and compete with that? In order to take the nectar back to the hive and turn it into honey, the bees carry it in tiny pouch near their stomach. Once back in the hive, the nectar is regurgitated and passed on to other worker bees. The nectar is constantly being enriched with enzymes inside the bees’ bodies, which hydrolyze sucrose to a mixture of glucose and fructose. The processed nectar is then deposited into a honeycomb cell in the form of a droplet. In order for the honey to ripen and reach that dense, syrupy consistency, the hive must maintain a fairly constant temperature of 34-35 degrees Celsius. The process continues as hive bees flutter their wings constantly to circulate air and evaporate water from the honey, raising the sugar concentration beyond the  Finally the honey is placed into storage cells and the bees cap the cells with wax to seal them, thus being well preserved and ready for consumption. How to check the purity of honey?

The thumb test
Put a small drop of the honey on your thumb. Check carefully to see if it spills or spreads around. If it does, it is not pure. Pure honey will stay intact on your thumb.
The water test
Fill a glass with water. Add one tablespoon of honey into the glass. Adulterated or artificial honey will dissolve in water and you will see it around the glass. Pure honey on the other hand will settle right at the bottom of your glass.
The flame test
Did you know that organic honey is flammable? Take a matchstick, dip its tip right into the honey, strike the stick on the matchbox to light it (as you normally do). If the honey is pure, the matchstick will light with ease. The flame will also keep burning off the honey. However, if it is with impurities, it will not light due to the high amount of water as one of the impurities that fake honey contains.
The paper test
Drop honey on blotting paper or a paper towel. If honey has been diluted with water, it may be absorbed or leave a wet mark on an absorbent material. Pure honey should not be absorbed, but unfortunately, neither will honey diluted with most sugar syrups.
The vinegar test
Add some water and 2-3 drops of vinegar essence into the honey and stir very well. If the solution becomes foamy, that is definitely adulterated honey.

Mierea

Mierea este unul dintre darurile de nepretuit oferite cu generozitate de natura. Ea este si trebuie sa ramana un produs exclusiv natural, fiind obtinuta de albine din nectarul florilor, combinat cu o enzimă secretata de albine, apoi concentrată prin reducerea umidității în celulele de tip fagure. Pentru a transforma nectarul in miere, albinele lucrătoare transporta nectarul în niste mici saculeti aflati lângă stomac. Nectarul este apoi transmis din gură în gură altor albine care aşteaptă în stup. In timpul acestui proces, datorită efectului enzimelor din corpul albinelor, zaharoza din nectar este transformată în glucoză şi fructoză. Mai departe albinele care au preluat mierea, o transportă în niste alveole unde o aerisesc bătând din aripi pentru a evapora apa din ea. Pentru maturarea si condensarea mierii temperatura ideala din stup trebuie sa fie de 34 grade Celsius. In final mierea este depozitata şi acoperită cu căpăcele de ceară, devenind astfel conservata si gata de consum. Pe langa gustul delicios, mierea se evidentiaza prin puternice valente teraputice, ea fiind folosita ca remediu natural complementar, in foarte multe afectiuni ce tin de sistemul digestiv, respirator, nervos, in anemii si chiar in cicatrizarea ranilor. In lume, exista peste 300 de tipuri de miere, fiecare dintre ele evidentiindu-se in mod diferit, prin gust, culoare, textura, compozitie si indicatii terapeutice. Mai jos facem trimitere spre cateva dintre tipurile de miere existente si foarte important, va punem in tema cu ceea ce trebuie sa stiti atunci cand doriti sa consumati o miere pura, naturala, asupra careia nu sa intervenit prin mijloace sau adaosuri artificiale.

Cum recunosti mierea pura?

Exista cateva aspecte in determinarea puritatii mierii vis-a-vis de caracteristicile ei la o „prima vedere”. Astfel mierea pura nu devine lipicioasa atunci cand o frecati intre degete spre deosebire de mierea care contine indulcitori artificiali, aceasta din urma capatand un caracter lipicios. Mai mult de atat mierea pura are un caracter „gros/vascos” si are nevoie de timp pentru a se misca dintr-o parte in cealalta a borcanului. Din punct de vedere al aspectului mierea pura are un aspect omogen neputand fi observate impuritati contrastante, asa cum de multe ori in cazul mierii impure, se pot observa diverse fragmente ce plutesc in continutul borcanului. Deasemenea gustul dulce al mierii pure persista doar cateva minute (aprox. 2min), spre deosebire de gustul mierii modificate artificial, ce tinde sa persiste mai mult, datorita prezentei zaharului. Si totusi aspectele descrise anterior, pot fi scapate din vedere cu usurinta, atunci cand vorbim de un consumator non-connoisseur. Prin urmare mai jos va prezentem cateva teste si experimente usor de realizat de catre orice consumator, pentru determinarea calitatii si puritatii mierii:

Testul degetului
Puneti o picatura mica de miere pe degetul mare. Observati cu atentie daca tinde sa curga usor sau sa se imprastie imediat. Daca o face inseamna ca nu este pura. Mierea pura va ramane intacta pe degetul dumneavoastra.
Testul apei
Umpleti un pahar cu apa. Adaugati o lingurita de miere in pahar. Mierea modificata sau artificiala se va dizolva in apa si va pluti in jurul borcanului. Mierea pura se va depune imediat pe fundul borcanului.
Testul focului
Stiati ca mierea 100% organica este inflamabila?Luati un bat de chibrit. Inmuiati varful in miere, apoi incercati se aprindeti chibritul (asa cum se procedeaza de obicei). Daca mierea este pura batul de chibrit se va aprinde cu usurinta. Mai mult mierea va intretine flacara. Daca mierea este impura, batul de chibrit nu se va aprinde, printre altele si datorita continutului ridicat de apa, pe care de obicei mierea impura o contine.
Testul hartiei
Turnati miere pe o sugativa sau un servetel de hartie. Daca mierea a fost diluata cu apa, va fi absorbita sau va lasa o urma uda pe hartie. Mierea pura nu va fi absorbita, dar din nefericire nu va fi absorbita nici mierea diluata cu siropuri pe baza de zahar.
Testul otetului
Adaugati putina apa si 2 – 3 picaturi de otet in miere, dupa care amestecati bine. Daca amestecul face spuma, atunci puteti fi siguri ca acea miere este modificata artificial.

Tipuri de miere

Tipurile de miere existente in arealul apicol, sunt foarte numeroase variind in functie de continentul, tara si zona din care provin. Astfel putem indentifica la nivel mondial peste 300 de tipuri de miere, printre cele mai importante aflandu-se mierea de: tei, salcam, lavanda, mana, castane, menta, coriandru, manuka, zmeura, mac, cimbrisor, mierea poliflora.
